In this episode of On The Back Bar Podcast, Chris talks to Maxim Schulte, the new Bar Manager of Kol. A restaurant and Mezcaleria alongside Chef Santiago Lastra previously of Noma.
Kol is the debut restaurant from chef Santiago Lastra. Kol Mezcaleria will be in the restaurant's lower ground floor and will celebrate all things mezcal. An extensive selection of mezcals and tequilas will be on the drinks list, while street food-inspired snacks will also be on offer.
Before his two-year tenure at the American Bar, Schulte enjoyed time working around the world at venues including The Ritz-Carlton Saudi Arabia and Macau as beverage manager. He also won Beefeater Gin's Mixldn global competition, where he represented Hong Kong & Macau.
